The long-awaited festive season calls for long lazy days spent eating, drinking, laughing and catching up with family and friends. Impress your crew with a delicious Camembert recipe, devised by chef Maveer Thulsie of our The Manor restaurant. What’s more, it’s an absolute treat with our elegant Cabernet Sauvignon or our smooth-drinking Baronne, a blend of Cabernet Sauvignon and Shiraz.
Recipe: Baked Vine Leaf Wrapped Camembert
- 250g Camembert cheese (Dalewood or any other quality brand)
- 1 to 3 pickled vine leaves (available from Woolworths or specialty food stores)
- 250ml sugar
- 100ml balsamic vinegar
- 2 onions, sliced
- 20ml butter
- 10ml salt
- Pre-heat the oven to 180°C. Prepare caramelised onions by frying the sliced onion on medium heat in a pan on the stove. Once golden brown and translucent, add the sugar and caramelise until the sugar has dissolved. Add the balsamic vinegar and simmer for 10 to 15 minutes. Wrap the Camembert cheese in pickled vine leaves and bake in the oven, with the butter on top, for 5 minutes. Remove from the oven, top with the caramelised onions and serve with crackers or freshly baked bread. And don’t forget the wine!
